CasAgave is made from 100% Blue Weber agave, estate grown in the Highlands Region on a farm located in San Julian Jalisco. The agave is slow steam roasted in centuries old traditional thick stone walled brick ovens for 36-54 hours. Once cooled the pinas are shredded and the juice is medium slow fermented before being double distilled. The aroma is roasted earthy agave, and vanilla. The roasted agave entry builds to a sweet agave and vanilla peak. It fades with vanilla, citrus, and a sprinkle of black pepper, and finishes with medium warmth, a mild sting, vanilla and earthy agave taste. CasAgave Blanco Tequila is a smooth and tasty tequila that delivers the sweet agave profile I expect from a Highland Region grown agave with a little earthy agave flavor I get from Lowland grown agave tequilas.
