Review: 4 Copas Tequila Blanco

4 Copas Tequila Blanco was founded by Hector Galindo Miranda.  His family had been producing bulk tequila for other brand owners.  Hector decided to make his own.  In 1997 4 Copas was named the first certified organic tequila.  4 Copas translates to 4 cups.  It is made with 100% organic weber blue agave.  The agave is slow cooked in brick ovens and the extracted juice is fermented with natural organic yeast.  A proprietary purification process follows before each hand blown glass bottle is filled.  The aroma leads with earthy agave, and olive.  Additional time brings out smoke and lemon notes.  The sweet agave entry is joined by lemon building to an roasted earthy agave peak.  It fades with sweet agave and finishes with citrus peel, earthy agave, and pepper.
