Review: Cenote Cristalino Tequila
Any conversation about Cenote Cristalino Tequila should start with their very unique closer with its heavy steel trimmed pina and cork cap, with a flip top seal. Cenote is crafted by Master Distiller Arturo Fuentes and Master Blender Alejandro Garcia Perez. The entire process is managed at Fabrica de Tequilas Finos. Cenote takes its name from the Mayan named sacred wells formed by the collapse of porous limestone bedrock which revealed a secret subterranean world of crystal clear fresh water. The 100% Blue Weber agave base is grown for 6-7 years in the Lowland region. The trimmed, and cooked agave is fermented and double distilled using a combination of copper and stainless steel pot stills. The spirit then rests for 1 year in American oak casks and is triple filtered through coconut fiber, ionized Mexican silver, and finally active carbon filters to extract the amber hues before bottling on site. The aroma leads with cooked agave, and vanilla. Additional time brings out banana and coconut cream pie notes. The vanilla and agave entry is silky soft building to an orange, cinnamon, toasted coconut, and agave peak. It fades with vanilla custard, and finishes with orange peel, cinnamon rice pudding, and cooked agave. WOW!!
