Review: Centinela Eterno Cristalino

Centinela Eterno Cristalino is made at Casa Centinela, a fifth generation family owned distillery that has been making tequila since 1904.  It is made from 100% agave grown in the Highland region.  Once trimmed the pinas are cooked in masonry kilns and steamed at 90 degree celcius for 36 hours, then rested for another 36 hours.  The juice is extracted and fermented for 4 days with a proprietary yeast, then double distilled.  The tequila is aged for over 36 months in American white oak barrels, and charcoal filtered to remove most of the color.  The aroma leads with cooked agave, oak, vanilla, and banana.  Additional time brings out berry and toasted coconut notes.  The sweet agave entry builds to a citrus and caramel peak.  It fades with coconut, lemon, agave, and saline and finishes with rasperry, oak, and a sprinkle of pepper.
