Review: Flor de Cana Extra Seco Rum

Flor de Cana extra seco - CopyFlor de Cana Extra Seco rum is one of ten rums crafted with molasses from estate grown sugar cane in Chichigalpa Nicaragua.  The Pellas family has been distilling rum for five generations dating back to 1890.  The Flor de Cana brand was introduced in 1937.  Their Extra Seco rum was originally called Extra Dry.  It is distilled five times in a continuous column still and slow aged in American White oak barrels for four years.  It is charcoal filtered to strip the color before bottling at 80 proof.The aroma is coconut, and banana with an alcohol backing.  The dry entry has vanilla and coconut flavor building to a citrus peak.  It fades with a sprinkle of pepper and heat before a dry finish that leaves a slightly bitter alcohol aftertaste.  There is enough flavor here to mix in cocktails but I was expecting a smoother finish from a four year old rum.
