Review: Decada Silver Tequila

Decada Silver Tequila is produced at Tequila Quiote S.A. de C.V.  This distillery has been owned and operated by the same family for over 150 years.  Decada Silver Tequila is made from 100% Blue agave grown for 10 years in brick red soil, 10,000 feet above sea level on a single 1000 acre estate.  Once harvested the agave are steam roasted in steel ovens for 8-11 hours.  The pinas are slow crushed and shredded to extract the juice.  The agave juice is fermented with yeast from the leaves of the agave in stainless steel vats for 3-5 days.  The tequila is twice distilled in copper pot stills.  A 60 hour aeration follows where pure oxygen is circulated through the tequila.  Pure water filtered through reverse osmosis is blended to reduce to 80 proof.  The tequila then rests for 48 hours in stainless steel tanks prior to bottling in their distinctive X shaped . Review: La Certeza Blanco Tequila

La Certeza Blanco Tequila is no longer produced but it is still available on a limited basis from some online retailers.  La Certeza was imported by Mohawk Distilled Products which was acquired by Heaven Hill Distilleries in 2007.  La Certeza Tequila was created by the Beckmann family, one of Mexico’s oldest tequila families.  The Beckman family traces its lineage to Jose Antonio de Cuervo.  In 1992 Francisco Beckman sold his interest in the family distillery but maintained his interest in the agave fields.  In 2004 he opened his own distillery Tierra de Agaves.  This is the same distillery that creates the Lunazul line of tequila.  La Certeza Blanco is produced with estate grown agave.  Once harvested by hand the agave is slow cooked in autoclave ovens.  After fermenting the tequila is double distilled in traditional copper pot stills. Review: Tapatio Blanco Tequila

Tapatio Blanco Tequila is crafted at La Altena Distillery in the mountainous region of Jalisco.  This distillery was built by Don Felipe Camarena in 1937.  Tapatio is a Mexican word referring to a man from Guadalajara Mexico.  Today Tapatio tequila is made by Master Distiller Carlos Camarena, the grandson of Don Felipe.  While Tapatio tequila had been very popular in Mexico for 75 years, it was not released in the US until 2012.  Since then, Tapatio Blanco has won several awards and was selected as one of the top 18 tequilas by Men’s Journal.  Tapatio is made from 100% Arandas estate grown agave.  After slow roasting for four days, the agave is crushed with a traditional large stone Tahona wheel, fermented with a wild yeast culture dating back 80 years, double distilled in a small copper pot still, and then rested for 2 months in stainless steel tanks before it is bottled.       Read more »
