Review: Don Pilar Blanco Tequila
Don Pilar Blanco tequila was introduced in 2011, three years after they released their first tequila, Don Pilar Anejo. The tequila is named after Don Pilar, who arrived in the US in 1966 as a migrant worker. In 1986 with two partners they opened their first Tres Amigos Taqueria. In 2001 Don Pilar opened La Trasquila Distillery in San Ignacio Cerro Gordo Jalisco. Don Pilar Blanco is crafted with 100% Blue agave grown on five private ranches. The mature agave is gently removed, then steam cleaned, before it is steam cooked for 24 hours in autoclaves. After the agave juice is extracted, a Proprietary yeast is added and the must is fermented for 200 hours with music from Mozart, and music from the earlier Baroque period played to coax the conversion from sugar to alcohol. The tequila is then double distilled in stainless steel pot stills and filtered before it is rested and then bottled at 80 proof. Don Pilar Blanco features a picture of a younger unaged Don Pilar on the bottle, with their Anejo, and Extra Anejo tequila featuring older more aged photos of him. Read more
Review: Tres Generaciones Plata Tequila
Tres Generaciones Plata tequila was created in 1973 to honor three successive generations of tequila makers in the Sauza family. It is made with 100% Blue agave that was hand nurtured in the nursery at the Sauza ranch for the first year, and then planted in the field until they reach their perfect ripeness. The pinas are shredded before heating removing the harsh tasting plant fibers before cooking. Once the agave juice is extracted it is fermented in sealed tanks to avoid contamination. Tres Generaciones Plata is triple distilled and then bottled and labeled by hand at the same distillery where the Sauza family began in 1873. Read more

Review: Hotel California Blanco Tequila
Hotel California Blanco Tequila was introduced in the US in 2010. No, this tequila was not named after the Eagles hit song, but rather a hotel in Todos Santos on the Baja Peninsula of Mexico. This hotel was built in 1947 by Antonio Wong a Chinese immigrant. After years of neglect a Canadian couple John and Debbie Stewart bought the Hotel California and renovated it into an 11 suite Boutique Inn. The tequila is crafted in small batches with 8-10 year old Organic Weber Blue agaves. A strain of yeast straight from the agave plant is used in the fermentation process. The tequila is then double distilled. First in a traditional method and then in a cold filtration process where the temperature is reduced to -6C to remove all organic impurities. Read more
