123 Organic Blanco Tequila was released in 2011.  The brand was created by David Ravandi.  David also co-founded Casa Noble Tequila.  1 2 3 is crafted with 100% estate grown organic agave grown for 10 years in the Lowland region of the Amatitan valley.  The agave is hand harvested and the hearts are slowly cooked in stone ovens for nearly 2 days.  After the juice is extracted it is naturally fermented and then double distilled in small batches in a stainless steel pot still.  The tequila is hand bottled in recycled glass bottles with labels made from recycled paper and natural soy ink.The aroma is earthy agave and citrus.  The sweet lemon and agave entry builds to a lemon lime citrus peak.  It fades with a warm mild peppery sting with earthy agave joining the citrus taste.  The semidry orange flavored finish is briny, oily, peppery and mineral.  After a few sips I also pick up a creaminess to the finish.  For years I avoided paying extra for organic fruit and vegetables.  Then I tasted the difference.  123 Organic Blanco Tequila has the full flavored taste of organic agave, and that’s a good thing.
