ace perry cider - CopyAce Perry Hard Cider was introduced in 1996.  It was the second cider produced in Sebastopol California by the California Cider Company.  All natural apple and pear juice and Champaign yeast are blended and fermented 10-14 days.  It is then cold filtered four times and carbonated before bottling at 5% alcohol.It pours to a pale golden color.  The aroma is pear and honeydew melon.  The initial sweet taste of pear and melon is joined by a hint of pineapple building to a tart apple peak before fading with a semi dry lightly acidic finish.  There is a lot going here and it took a couple of bottles to sort through the many flavors.
