Review: Alma Del Jaguar Tequila Blanco

Alma Del Jaguar Tequila Blanco was launched in the US May 2023 and founded by spirits entrepreneur McCauley Williams who was inspired by his uncle Rick Williams, and his commitment to wild life conservation in Northern Mexico.  Rick Co-Founded The Northern Jaguar Project.  Alma Del Jaguar is crafted at Feliciano Vivanco Y Asociados from 100% blue agave grown on the Vivanco Estate at an elevation approximately 6800 feet in the Highland region of Los Altos de Jalisco, and iron rich mineral water from an 800 foot well on the estate.  The hand selected and trimmed pinas are slow cooked in brick ovens for 54 hours.  Once cooled the pinas pass once through a roller mill.  The unused plant fibers are used as compost and returned to the fields as natural fertilizer.  A portion of the juice is fermented with natural wild yeast and another with Champaign yeast.  Both are open air fermented while classical music plays.  Both are double distilled in copper pot stills and then blended together in an 80% Natural Wild Yeast 20% Champaign yeast blend.  A percent of proceeds is donated to conservation groups including the Northern Jaguar Project.  The aroma leads with cooked agave.  Additional time in the glass brings out tropical fruit and pepper.  The sweet cooked agave entry has a soft mouth feel.  Orange arrives building to a tropical fruit peak.  It fades with mineral, citrus, bell pepper, and saline, and finishes with orange peel, mint, and black pepper.
