Cape May Distillery Toasted Coconut Rum is one of six rums crafted at the Cape May Distillery in Cape May New Jersey. The other five rums include Beach Rum, Barrel Rum, Spiced Rum, Blueberry Rum, and Strawberry Banana Rum. They also produce vodka, gin, and whiskey. The distillery was the dream of two college friends with a love of distilling, and was founded in 2015. Cape May is located on the southern tip of New Jersey and is recognized as the country’s oldest seaside resort. Cape May Distillery Toasted Coconut Rum is made from their Beach Rum base. Real coconut is toasted in butter and aged in the barrel with the rum.The aroma is coconut syrup, banana taffy, pineapple juice, caramel, lime juice and orange baby aspirin. The sweet vanilla and coconut entry is joined by chocolate. Banana and tropical fruit flavor arrives building to a coconut banana peak. It fades with orange, pineapple, and banana flavor with a warm peppery sting. The finish is mineral and bittersweet with orange peel, and coconut taste. Cape May Toasted Coconut Rum is far less sweet than most coconut rums. It also has a unique tropical fruit flavor, unlike any coconut rum I’ve tasted. I have not had their Beach rum so I don’t know if the flavors come from the rum base, or the barrel aging with the toasted coconut.
