Review: El Mayor Tequila Anejo Cristalino

El Mayor Tequila Anejo Cristalino is crafted by Grace Gonzalez the daughter of Master Distiller Rodolfo Gonzalez.  It is made from hand picked agave grown on the Gonzalez family estate.  The agave is trimmed, chopped, stacked and loaded into a stainless steel oven where it is slow cooked for 24 hours.  Once cooled the agave hearts are milled then gently pressed to release the juice.  The juice is fermented with family heirloom yeast for several days then double distilled in copper lined pots.  The tequila is aged for a minimum 12 months in American white oak barrels and filtered using ultra fine charcoal.  The aroma leads with cooked agave, oak, and vanilla.  Additional time brings out caramel, raisin, and tropical fruit notes.  The sweet agave entry is joined by vanilla and caramel building to a vanilla custard, raisin, and caramel peak.  It fades with tropical fruit and finishes dry and peppery with pineapple, raisin, orange, and oak.
