Review: San Matias Cristal

San Matias Cristal tequila is made from 100% agave grown and harvested in the red soil fields of the Highland region of Jalisco.  The trimmed agave is baked in traditional brick overs for 48 hours at 194 degrees.  The agave juice is extracted with a roller mill and screw mill.  Once extracted the juice is fermented for 72 hours in stainless steel tanks and double distilled.  The tequila is then barrel aged for 18 months in American oak barrels then the spirit passes through 7 filters including carbon and cellulose to eliminate the color and some of the wood notes.  The aroma leads with vanilla and baked agave.  Additional time brings out cake batter notes.  The citrus and cake batter entry is joined by vanilla building to a vanilla cake peak.  It fades with lemon and cooked agave and finishes dry, peppery, and very bittersweet with black pepper, vanilla, and burnt lemon peel taste.
