San Matias Legado Blanco Tequila - CopySan Matias Legado Blanco Tequila is made from 100% Blue Agave, estate grown for 7-10 years.  The agave hearts are slow baked for 48 hours at 194 degrees.  Once extracted the agave juice is fermented for 72 hours before the tequila is double distilled.  San Matias Blanco Tequila is part of the Sazerac family of spirits.  It is produced at the Tequila San Matias de Jalisco SA CV Distillery.  This is the same distillery that produces Corazon Tequila.The aroma is earthy baked agave with citrus and a briny backing.  The sweet agave entry is joined by citrus flavor that increases in intensity as it warms in my mouth.  It fades with agave and finishes with a warm mild sting with sweet mineral taste.
