Seattle Cider Semi Sweet hard cider was introduced with their Dry cider September 2013. It is made by the founders of Two Beers Brewing Company. They start with hand picked Granny Smith, Fuji, Red Delicious, Golden Delicious, and Gala apples from Eastern Washington. They add white wine yeast, and pure cane sugar. After fermentation it is filtered for clarification before aging for at least two weeks in a tank. They sell this cider on draft and in 16 Oz. cans.During fermentation the natural sugars from the apples are converted into alcohol leaving little to no residual sugar. In post fermentation a back sweetening process is used where sugar is added back into the cider. This cider has very little sugar added back. The result is a cider that enters with dry unsweetened natural apple flavor. The taste is on par with an unsweetened chocolate. The flavor builds in intensity before fading with a hint of cherry on the dry finish. I would like to thank Seattle Cider for publishing the Brix for this cider. Someday this may be as common as publishing IBU’s with beer. A brix is the sugar content of a drink with 1 gram per 100 grams of content equal to 1 Brix.
