Review: Syntax Crystal Vodka
Syntax Crystal Vodka is crafted from 100% locally grown Colorado wheat. The distillery grinds, mashes, ferments and then distills in a handmade column still. The spirit is carbon filtered before bottling onsite. Head Distiller and Co-Owner Heather Bean graduated from High School when she was 14. She earned a Masters degree before she was legally old enough to drink a beer. After a 15 year career with Hewlett Packard she opened Syntax Spirits with Co-Owner Jeff Copeland. This is a true grain to glass distillery that currently also crafts Syntax Straight Bourbon Whiskey, Rose Gin, and Heavy Rum. They craft their spirits in the Greeley Elevator Building, a 115 year old former grain elevator they repurposed. The aroma leads with vanilla, and cream of wheat cereal. Additional time brings out sweet potato, cherry, and butterscotch notes. The sweet vanilla entry has a soft viscous mouth feel. Whole wheat bread arrives building to a cherry, sweet potato, and butterscotch peak. It fades with banana, and creamy wheat cereal and finishes semi-dry with vanilla, grapefruit peel, cherry, mineral, and anise.
