Review: Taildragger Toasted Coconut Rum
Taildragger Toasted Coconut Rum is crafted in Plainfield Illinois at the Tailwinds Distilling Company. Husband and wife entrepreneurs Toby and Jillian Beall launched the brand in 2012 after years of planning. Their focus was on returning Americas first distilled spirit to the states with a truly American rum. Toby spent years traveling as a commercial pilot and adventure seeker through the Caribbean Islands, South America, and Mexico. Together the couple tapped their experience of tasting the local flavors from each of the regions to bring home and create their American made spirits. The distillery also crafts a white, dark, amber, and coffee flavored rum along with a 100% blue agave spirit. Taildragger Toasted Coconut starts with their white rum base made from sugarcane molasses sourced from Louisiana and formed from only boiling the cane juice once. This gives their rum an “Agricole like ” quality. It is fermented over a 4 to 5 day period. The spirit is distilled in a hybrid pot/column still. The rum is never chill or charcoal filtered only a standard plate and frame filter removes the particulate. They toast their own coconut before infusing and lightly sweetening to overcome the natural bitterness toasted coconut has. The spirit is hand bottled and labeled at 60 proof. The aroma is burnt sugar, vanilla, tropical fruit, and toasted coconut with a caramel and agricole backing. The sweet vanilla and tropical fruit entry has a subtle herbal flavor. Molasses and buttery coconut arrive building to a lightly sweetened toasted coconut peak. It fades with vanilla, cane sugar, coconut flake, and a hint of green olive. The finish is warm and bittersweet with toasted coconut, and tropical fruit with notes of pineapple, green banana, and agricole flavor, leaving a mild rum sting. This is a well crafted adult coconut rum that while made with sugar cane molasses has more of a flavor I get from a pressed cane sugar rum, similar to a Rhum Agricole from Martinique. Tasty enough to drink on its own Taildragger Toasted Coconut will also mix well in your favorite cocktail. Supply is limited as the Trailwinds Distilling Company recently closed.
