Teeling Single Pot Still Irish Whiskey is the first whiskey to be distilled in Dublin in nearly 50 years. Prior to it’s release Teeling had sourced their whiskey from the Cooley Distillery that at one time was owned by the Teeling family. Teeling Single Pot Still pays homage to a Dublin style made famous by the now closed Dublin Whiskey Distillery. It is crafted using a uniquely Irish malt bill consisting of 50% malted and 50% un-malted barley that has been triple distilled and matured in a combination of American virgin oak, bourbon, and sherry casks. The whiskey is non chill filtered and bottled at 92 proof. It pours to a mellow golden color. The aroma is cinnamon spiced apple, oak, and malted cereal. Additional time in the glass brings out notes of green banana, vanilla, cocoa, and grape. The sweet grape entry is joined by creamy cereal, toasted almond, and vanilla building to a salted caramel apple peak. It fades with a white peppery sting. The finish is dry and oaky leaving cocoa, grape, cinnamon, and almond taste. This is a 92 proof spirit so expect some heat. Personally I will sip mine with a large ice cube, rather than a splash of water.
