Review: Tequila Don Ramon Platinum Anejo Cristalino
Tequila Don Ramon Platinum Anejo Cristalino was released March 2021. It is one of two cristalino tequilas produced by Don Ramon. Don Ramon Platinum Reposado Cristalino is the other one. Don Ramon was founded in 1996. Master Distiller and Blender Don Ramon crafts their Platinum Anejo Cristalino from 100% agave grown in the Highland region. The hand selected and trimmed agave is slow cooked in autoclave ovens over the coarse of several days. The extracted juice is fermented while classical music is used to control the movement of the yeast to stimulate the aroma. Once double distilled, the spirit is aged in American and French oak barrels for 12 months. After blending a multi step filtration process follows removing most of the liquids amber color and piquancy. It is then bottled 100% additive free. The aroma leads with cooked agave and vanilla cake batter. Additional time brings out baking spice and sliced orange. The sweet agave and vanilla entry builds to a vanilla cake and agave peak. It fades with raspberry, orange, and cocoa, and finishes dry with toasted oak, vanilla, lemon peel, and pepper. Though filtered clear Don Ramon Platinum Anejo Cristalino retains a significant amount of vanilla flavor from 12 months resting in French and American oak barrels. I also enjoyed the smooth sweet agave presence. The finish may be a little too dry for some.
