Tequila Tierras Blanco was introduced in 2009 as the first certified organic tequila. It is crafted with organic agave grown for eight years. The cores are split into sections and steam cooked for 8-9 hours in stainless steel auto claves. The agave is then shredded and crushed to extract the agave juice. After fermentation the tequila is distilled in pot stills and after removing the heads and tails a second distillation follows. Tierras Blanco is aged for 4-6 months in white oak barrels.The aroma is oaky, earthy agave, olive, and citrus. The flavor enters with earthy agave, vanilla and herbs. Citrus arrives and builds to a juicy orange, and lime peak. It fades with black pepper flavor and sting, and finishes with some heat and a salty olive and oak, dry finish.
