Review: Toppers Spiced Rhum

Toppers Spiced Rhum is one of six rhums crafted in St Maarten at the Toppers Distillery.  For years Melanie Daboul created several flavored rhums out of her home kitchen.  These rhums were given as complimentary after dinner drinks at the two restaurants she and husband Topper Daboul own on the Dutch side of St Maarten.  Toppers Spiced is a premium rhum infused with vanilla bean, cinnamon, cloves. allspice, cardamom, nutmeg, orange peel, aniseed, and black peppercorn. It pours to a golden amber color.  The aroma is vanilla, cinnamon, allspice, cardamom, and nutmeg, with a clove backing.  The sweet vanilla bean and sugar cane entry, is joined by allspice, and cinnamon, followed by nutmeg and cardamom flavor.  Vanilla flavor again becomes the lead before fading with caramel and a warm black peppery sting.  The finish is semidry with orange peel and clove, that leaves a touch of licorice taste.  Several spiced rums, and for that matter several gins infuse a full palette of different spice in their spirit base.  The result is often one uniform flavor.  Melanie Topper has crafted a spiced rhum that offers flavor separation allowing us to taste each of the many spices used in creating this rhum.
