Review: Timber Creek Florida Rum

Timber Creek Florida Rum was first released October 2017.  You may ask what is Florida rum.  In order to be designated a Florida rum, a distiller must use 100% natural Florida limestone spring water and 100% natural Gulf Coast grown sugar cane.  If aged, it must be barrel aged in the heat and humidity of Florida, and it must be bottled unfiltered.  Timber Creek Florida Rum is made from 100% Louisiana coast grown sugar cane made into food grade molasses, and local Florida limestone spring water.  It is double distilled in a custom copper pot still, and thumper on a 1400 acre family farm owned by Master Distiller Aaron Barnes, just north of Destin Florida.  The spirit is aerated and rested in stainless steel before bottling unaged and unfiltered at 80 proof.  Timber Creek uses a proprietary distilling and blending technique called Pureblend.  Read more »

Review: Miami Club Coconut Grove Rum

Miami Club Coconut Grove Rum is made from the original Miami Club rum base which is produced from sugar cane harvested from local fields.  A 2/3 molasses and 1/3 sugar cane juice blend is fermented and double distilled using a family recipe dating back to 1911 in Puerto Rico.  The spirit is slow aged in French limousine and American white oak barrels for 2 years while it is simultaneously infused with the music of Miami.  Salsa, samba, and Caribbean rhythms are played 24/7 through vintage Bose 901 speakers to activate the barrels for a richer deeper flavor yield.  A 7 step filtration process follows including among other things coconut shells and a secret oxygenation technique used to aerate the spirit.  Real Miami grown coconut is infused with the rum before bottling at 60 proof. Review: Dove Tale Rum

Dove Tale Rum was introduced May 2016 along with John Drew Rye, and Brixton Mash Destroyer, a blend of 45% rum and 55% Kentucky bourbon.  These brands were created by John Drew, probably best known for his well crafted cigars.  Dove Tale Rum is distilled in Auburndale Florida.  A quick Google search only shows one distillery in Auburndale Florida, Caribbean Distillers.  Caribbean Distillers also produces Club Caribe, Ron Carlos, and Black Roberts rum.  Dove Tale Rum is made from black strap refiner’s grade molasses produced from sugarcane grown in the Florida Everglades.  After distilling the spirit, it is aged in ex-bourbon barrels for three years. Review: Oak and Palm Coconut Rum

Oak and Palm Coconut Rum is made at the St Petersburg Distillery that was founded in 2014 by the father-son team of Dominic, Steve, and Dominic Jr. Iafrate.  In 1997 they moved their successful recycling business from Michigan to Florida.  The St. Petersburg Distillery also produces Oak and Palm Spiced Rum, Tipplers Orange Liqueur, Royal Mead, Banyan Reserve Vodka and the complete line of Old St Pete’s spirits.  The Master Distiller is Henry Kasprow.  While no specific production techniques are offered, the distillery boast a handcrafted copper pot still produced in the early 1930’s by EB Badgett and Son.  Oak and Palm Rum is flavored with real coconut and natural flavors.  Read more »

Review: Big Five Coconut Rum

Big Five Coconut Rum is one of three rums crafted at St Petersburg Distillery under the Big Five Label.  The other two are Big 5 Silver, and Big 5 Gold Rum.  Big Five Rum is named for the five grand social clubs that thrived in Havana in the 1950’s.  For the record those clubs included The Vedado Tennis Club, Miramar Yacht Club, Biltmore Yacht and Country Club, Havana Yacht Club, and Casino Espanol.  Big 5 rum is made from sugar cane molasses sourced from South Florida sugar growers.  The rum is column distilled four times and pot distilled once.  The spirit is then artisan water proofed over four stages, charcoal filtered twice, and rested for 48 hours at each stage.  The resting period gives the water and spirit time to marry.  Natural coconut flavors are infused before bottling at 70 proof.
