Review: Plantation Isle of Fiji Rum
Plantation Isle of Fiji Rum is made from local Fijian sugar cane molasses and pure Fiji water at Rum Co. of Fiji Distillery. This distillery has been crafting rum since 1980. Two of the rum brands they produce are Rutu and Bati. Plantation Isle of Fiji is fermented for 4 to 5 days and pot and column still distilled . The rum is tropical aged in Fiji for 2-3 years in previously used bourbon barrels. After aging, the rum sails to the Southwest of France for a second maturation in French Ferrand Cognac casks for one year. Isle of Fiji is one of six rums in the Plantation Rum Signature Blends Series. Review: Plantation Xaymaca Special Dry Rum
Plantation Xaymaca Special Dry Rum was launched September 2018. Xaymaca was the name given the island of Jamaica by it’s first inhabitants, the Arawaks, and translates to the land of wood and water. Xaymaca Special Dry is made from 100% pot still Jamaican rum. When Pierre Ferrand purchased the West Indies Rum Distillery they also acquired 1/3 ownership of the Long Pond and Clarendon Distilleries. Xaymaca Special Dry is a blend of rums distilled in the old John Dore pot still at Long Pond and the Vendome pot still at Clarendon. Two rums from each distillery are selected. Each rum is aged for 1-3 years in Jamaica in once used bourbon barrels. After blending, the rum is shipped to Southwest France where it is further matured for one year in cognac barrels. Read more
Review: Plantation Stiggins Fancy Pineapple Rum
Plantation Stiggins Fancy Pineapple Rum was created by Alexandre Gabriel, Cellar Master of Plantation and David Wondrich, author of the book Imbibe. This rum was not intended for sale it was created to share among colleagues and friends at Tales of Cocktail 2014. The rum is named for Reverend Stiggins whose favorite drink was Pineapple Rum in the Pickwick Papers novel by Charles Dickens. The hand cut bare rinds of Queen Victoria Pineapple are macerated with Plantation 3 Star White Rum for 1 week, and then distilled in a copper alembic pot still. It is then blended with Plantation Original Dark Rum which has been infused with the fruit of the pineapple for three weeks. The rum is then rested for three months in oak casks. Read more
