Review: Socorro Tequila Blanco

Josh Irving and Pablo Antinori met while working at Southern Glazer Wine & Spirits.  They shared a love of tequila and soon made plans to create their own brand.  After visited over two dozen distilleries and sampling several tequila blends from each, Casa Tequilera Dinastia Arandina was selected to craft their tequila.  The pair raised nearly $1.3 million from family and friends in December 2019, and April 2020 Socorro Tequila was launched.  Socorro Tequila Blanco is one of three expressions currently produced.  Socorro Tequila Blanco is made from 100% blue agave grown in the Highland region.  The trimmed pinas are brick oven steam cooked between 194-198 degrees Fahrenheit for 24 hours, then allowed to “sweat” out the undesirable juices.  Once the sweating is complete the pinas are steam cooked for another 24 hours.  The extracted juice is fermented in stainless steel tanks with a proprietary yeast for a minimum 96 hour and then double distilled.  The tequila undergoes an oxygenation prior to bottling.
